Meaty and Rich, and not too salty!!! Make this anytime of year!
This takes at least three weeks, but it is well worth the wait. This uses TCM or tinted curing mix, (sodium nitrate) which keeps meat pink while cooking. It's not vital, but it will just be cured beef and not corned.
Brining the chicken helps keep the chicken moist and juicy, while the coating crunchy. Try tossing the finished chicken in honeyed hot sauce!
A great healthy snack with the addition of fresh crunchy peas and crispy bacon. Serve with greens over earthy bread. A great way to use up colored eggs.
Crispy Florida rock shrimp over creamy stoned ground grits. Topped with tomato bacon jam, and earthy greens.
